The Tullamore woman overcame Christina Desmond, winning all five rounds in the 66kg decider.
Elsewhere, Westmeath's Jason Nevin won his first national title at senior level.
The Olympic Boxing Club fighter won at 60kg, beat Nathan May by three rounds to two.
